Potato Leak Soup

The Healthy Loft enjoyed this delicious recipe while at our lovely dinner club yoga retreat in Aquebogue.


12 cups of chicken stock

9 potatoes peeled and cut into bite-sized pieces

6-8 leaks – whites with some of the greens sliced into medium rings

4 stalks of celery chopped

1 1/2 cups of light cream (optional)

2 bay leaves

black pepper


fresh thyme

1 bunch parsley




In a chopper, place fresh thyme, parsley, cloves and garlic and mix to a paste. Saute’ paste in oil in your stock pot.

Add celery and leaks to saute’ mixture. Let simmer for ten minutes.

Add potatoes.

Stir mixture.

Add chicken stock, bay leaves, salt and pepper.

Cook until potatoes are tender (about one hour).

Remove bay leaves.

Let cool and use an immersion handheld blender to blend soup.

If using a blender, be careful not to place too much in the blender.

Add light cream if you wish, reheat, and serve!

After placing serving in soup bowl, you can garnish with chopped chives and serve with a crispy garlic bread, olive oil/rosemary baguette, etc.

We enjoyed this dish for lunch with a choice of salmon bruschetta or salmon teriyaki. Delicious!
