Seafood Kebabs

Salmon & Citrus Kebabs have got just the right kick to keep you grabbing for more. The citrus adds a tropical flair and delightful companion to the grilled salmon. Shrimp & Scallion Kebabs also offer a refreshing spin to your average kebab. Together, they are a match made in heaven and are sure to be a kebab lovers favorite.

Salmon & Citrus Kebabs
Ingredients:

2 lbs. boneless, skinless salmon, cut into 1-inch pieces
3 large lemons (2 thinly sliced plus 1/4 cup lemon juice)
2 cloves garlic, grated
1/3 cup olive oil
1/2 teaspoon crushed red pepper flakes
kosher salt
24 wooden skewers (soaked in water about 15 minutes) or metal skewers

Directions:
1. In a large bowl, toss the salmon with the lemon slices and juice, garlic, olive oil, red pepper, and 2 teaspoons of salt. Holding two skewers parallel, ; thread one folded lemon slice, then one piece salmon; repeat until each pair of skewers has four to five lemon slices and three or four pieces salmon.

2. Heat an outdoor grill to medium-high or a grill pan over medium-high. Grill the skewers, turning occasionally, until the salmon and lemon are lightly charred and cooked through, 6 to 7 minutes. Transfer the skewers to serving platters.

Shrimp & Scallion Kebabs
Ingredients:

1 lb. large peeled and deveined shrimp
2 bunches scallions (white and light green parts only) cut into 2-inch segments
1 clove garlic, grated
2 teaspoon lemon zest
2 tablespoons olive oil
1 teaspoon honey
1/4 teaspoon crushed red pepper flakes
kosher salt
24 wooden skewers (soaked in water about 15 minutes) on metal skewers

Directions:

1. In a large mixing bowl, toss the shrimp and scallions with the garlic, lemon zest, olive oil, honey, red pepper, and 1/2 teaspoon salt. Holding two skewers parallel, thread a few pieces scallion, then one shrimp; repeat until each pair of skewers has three or four shrimp.

2. Heat an outdoor grill to medium-high or a grill pan over medium-high. Grill the skewers, turning occasionally, until the shrimp and scallions are lightly charred and cooked through, 4 to 5 minutes. Transfer the skewers to serving platters.
